This project focuses on the analysis and implications of per- and polyfluoroalkyl substances (PFAS) in food packaging and their potential health risks. PFAS are synthetic chemicals known for their water- and grease-resistant properties, commonly used in paper-based food packaging. However, due to their persistence in the environment and potential bioaccumulation, they pose significant health concerns. The project highlights the use of mass spectrometry as a powerful tool for detecting and quantifying PFAS in food and environmental samples, aiding regulatory efforts and the development of safer alternatives.
